3 cups brown rice flour1 1/4 cups millet flour
3/4 cup tapioca flour
Put this in a bowl and combine with a whisk. Transfer to a container that will hold 5 cups. Or if the recipe calls for 2 cups, place the remaining 3 cups in a quart sized mason jar.
Use this as a flour substitute; it works great.
When baking, for every 2 cups, add a scant (not quite full) 1/2 tsp of xanthan gum.
