Hey, chocolate lovers: where does your cacao come from?  How is it grown, fermented, dried?

Don’t feel bad if you can’t answer. Most people have no idea. Heck, most chocolate manufacturers have no idea!  After all, it’s not as if they were buying directly from the producers. But when Art Pollard founded Amano Artisan Chocolate in 1998, he knew that he wanted a different kind of operation—rather than a manufacturer, he chose to become a chocolatier—handcrafting his product from bean to bar, with the most delicious of results.

On Tuesday, February 2, 6 PM PST/ 9 PM EST we’ll be talking live with Art about his adventures seeking the perfect cacao beans in exotic locales such as Venezuela and Madagascar.  He’ll fill us in on his years of working with farmers to improve their cultivation techniques in order to create a premium chocolate in his own factory.
