PRIMAL: Art of the Butcher

IMG_0794WhereFoodiesGo co-sponsored the inaugural PRIMAL event that took place in Napa Valley last Saturday.  This was a showcase for some of the top butchers in Northern California (Taylor Boetticher, Dave-the-Butcher) to demonstrate breaking down whole animals (all sustainably raised), then turning over the meat to some notable San Francisco chefs (Chris Cosentino, Stefan Terje, and more) to cook over open fires. IMG_0767 Yes, the Fire Department was there, keeping a wary eye on all the proceedings.  In addition, there were about 8 wineries , along with Charbay Distillery and Magnolia Brewery.  IMG_0733And Jeremy Fox, Executive Chef at Ubuntu, was there, cooking veggies over open fire as well.  Here’s some tasty irony for you. IMG_0720 Chris Cosentino was wearing his “Mr. Meat” garb, and working like a madman during the entire event. I spoke with his wife later this week and she told me that by the time they slowed down a little bit, all the meat was gone.  But Jeremy saved the day when he offered them some delicious grilled porcini mushrooms!
