Dinner Menu to pair with beautiful red wines

We have a friend coming over for dinner on Friday night who is a real foodie, and is bringing some nice aged red wines. Let's assume 8-15 year old Cab Sauv or Bordeaux. Can you please suggest a menu, emphasis on farm-to-table, that would pair up nicely with some big reds? Beef or even buffalo would be fine, with cuts ranging from prime rib to short rib to New York.
